I highly recommend these learning modules called The Cutting Edge developed by Cornell University. The product development and product life cycle modules were my favorites. They walk you through every step in product development from undertanding the market to generating a final product and then how to market that product. It focuses on the apparel industry, but the information can be applied to any kind of craft.
